Weekend Cooking: Oriental Casserole

I know the name of this recipe isn’t politically correct, but my sister got it from her husband’s aunt years ago.  It was hard to get a good picture of it, but believe me when I say it tastes better than it looks.  The recipe is simple, but I rarely make it in the summer, since it has to bake for so long.  You can make the casserole ahead and bake it just before dinner.  Add a salad and a vegetable and you’re ready to eat!

1 pound ground beef

1 small onion, chopped

1 cup chopped celery

¼ cup soy sauce

1 can mushroom soup

1 soup can water

½ cup rice

1 small can mushroom stems and pieces

1 can bean sprouts

Brown meat.  Mix all other ingredients and bake in a 2 quart casserole dish at 350º for 1½ hours.

Serves 5 to 6.

    This looks tasty and simple! I’ll bookmark it. I never have a problem with leaving the oven on for 1 1/2 hours. =)

    I find that “it tastes better than it looks” is true of most dishes :P

    No, brown food does not photograph well..

    But it does sound easy and yummy.

    It does look good to me because I know the problem and the appeal of brown food! Perhaps you could rename it “Asian Casserole” ….

    That does seem like a long time to cook a casserole. Have you ever tried cooking it less just to see if it tastes the same? Have a great weekend!

    Wow! That does sound easy. I bet it is yummy. It also sounds like a great casserole to have on a buffet table. Hummmm, my wheels are turning.

    The name of this recipe may be politically incorrect, but it sounds and looks so good. I ‘d probably substitute ground turkey for the beef as I don’t usually eat red meat. Thanks for sharing this recipe. :-)

    maybe it’s the ‘northerner’ in me that makes me distrustful of anything ‘casserole’! :) i’ve actually tried to make two different casseroles in my lifetime and both have been disasters. i like the ingredients in this one; maybe i’ll have to lift my casserole embargo and try yours!

    Thanks for introducing me to this meme, Kathy! I am definitely in. Your recipe sounds good and easy to make. Since we love rice in our family and I am always looking for different ways to cook it, I will have to try it.

    I like casseroles that can be made ahead of time and then baked. This one sounds very good and is probably creamy but still crunchy.

    This does sound good! I don’t think I have ever had this, but looking at all the ingredients I know it would be a big hit in our house. Thanks for posting this recipe, I will have to try it!

    I’m a big fan of meals I can prep in the morning and let sit in the fridge until it’s time to bake them. I make a chicken divan casserole about every other week in the winter; this looks like a great make-ahead meal to ease the dinner-time rush.
