Pork Tenderloin with Plum Salsa
When I was on Twitter a week or so ago, Little Brown tweeted a link to this recipe by Andrew Dornenburg and Karen Page, the authors of The Flavor Bible. Since plums are one of my favorite fruits, I printed the recipe. Carl and I tried it the other night and we both thought it was delicious. I diced the plums and the onions instead of slicing them, because I wanted it to look more like a traditional salsa. I made it a little early and sampled it all afternoon, so we were lucky there was some left by dinnertime. We both loved the plum salsa and said we’d eat it with tortilla chips. We served the pork tenderloin with corn and a Caesar salad for a savory dinner.
