Weekend Cooking: I Love Corn
Lisa Skye truly loves corn and has collected fifty corn recipes from some of the most well know chefs in the country in a wonderful little cookbook called I Love Corn. The cookbook opens with tips on buying, storing, preparing, serving, and freezing corn and ends with bios of the contributing chefs as well as conversion tables and an index. In between are recipes for breakfast, soups, starters, main courses, side dishes, and sweets, all made with corn.
Almost every recipe in this cookbook is appealing, after all, they’re made with corn. Some of them are a little unusual, like Fresh Corn Ice Cream and Corn and Cherry Tomato Hash with Poached Duck Egg and Truffle Hollandaise, and I doubt I’ll make them – I wouldn’t even know where to buy duck eggs – but most of them look delicious. Some of the recipes that I want to try are Roasted Corn and Goat Cheese Quiche with Brown Rice Crust, Grilled Corn, Mexican Style, and Spicy Stir-Fried Corn and Broccoli. I tried the Jalapeño Corn Muffins since I had all the ingredients on hand and they were a big hit. The directions were clear and concise and the muffins were easy to make. This recipe comes from Jay Foster, the chef-owner of farmerbrown in San Francisco.
Jalapeño Corn Muffins
1 ¼ cups all-purpose flour
1/3 cup cornmeal
1/3 granulated sugar
3 ½ teaspoons corn flour
1 1/8 teaspoon salt
2 ½ teaspoons baking powder
1 1/3 cups whole milk
2 large eggs
1/3 cup plus 2 tablespoons vegetable oil
5 1/3 tablespoons unsalted butter, melted
5 tablespoons finely diced, seeded jalapeno (about 2 medium-sized jalapenos)
- Preheat the oven to 350ºF. Coat twelve silicone muffin cups (or a twelve cup muffin pan) with nonstick spray.
- Combine the flour, cornmeal, sugar, corn flour, salt, and baking powder in a large bowl. Whisk together the milk, eggs, and vegetable oil in a separate medium-size bowl Add the wet ingredients to the dry ingredient and mix well with a soft rubber spatula. Add the butter and jalapeño. Stir until completely incorporated.
- Ladle the batter evenly into the prepared cups. Bake for 26 to 28 minutes on the center rack, until slightly golden on top.

This sounds like a book for me. I like corn, but I pretty much use it for the same stuff over and over. I could use some inspiration.
The muffins look so good. I love corn muffins with that kick of jalapeno. Book sounds great, could use new ideas now that we’re heading into fresh corn season.
I’m not very keen on corn but this recipe sounds good. Do the muffins really taste like corn a lot? I imagine not. What did you eat with/on them? Seems like a recipe I’d like to try sometime.
Oddly enough, I can’t remember what else we had that evening. These muffins taste kind of like corn bread.
That sounds good. I may make them for my next book group meeting. I have small muffin silicone forms that are ideal for small bites.

Gosh, I need this! I love anything corn too! In Tucson, we can get Posole from the native tribes – it’s a large-kerneled corn. I don’t know really how to describe it but it’s way better in my opinion than “regular” corn (although Jim is a “regular” corn guy).
How unique! A cookbook on corn, which I love. My kids are wearing braces now and can’t eat corn on the cob so I cut the niblets off, but it’s not the same they tell me. There’s nothing like biting into corn right from the cob!

I saw a t-shirt in SF last weekend that made me think of you and the Lard cookbook. It said “Praise the Lard.” Cracked me up, but then I’m easily amused.
Poached Duck egg with truffle hollandaise-boy that taste great. I love corn on the cob-I must say that if it is sweet I do not need any condiments on it.
Those corn muffins look delish.I wouldn’t think to make corn ice cream, but there are some unusual ingredients that taste great as ice cream so who knows!
I have recently become so addicted to jalapenos! and everytime I go to a restaurant that serves corn & jalapeno muffins I always choose it ~ I’m definitely going to be trying this recipe out!
YUM! I have a bag of corn sitting on my counter, waiting for consumption this evening with my BBQ chicken kabobs. Hey I grew up in Indiana so I am all about the corn.

I’ve made Jamie Oliver’s Corn Chowder twice in the last few months, and it is so good. It’s made with 1% milk, so it’s lower in fat, and I can’t wait for fresh corn season to make it again.
Those are definitely yummy. I also make a cheesy corn muffin and the kids love those!

I love corn muffins so this sounds delicious. This cookbook is a must for us. We love corn and just had our first ears of corn on the cob for the season. They weren’t the best but it sure did taste good!
