Weekend Cooking: I Love Bacon!
Jayne Rockmill was inspired to do something to help the hungry, so she contacted many chefs and asked them for the favorite bacon recipes. After all, who doesn’t love bacon? The result is I Love Bacon!, a cookbook with over forty recipes that include, you guessed it, bacon. The proceeds from this cookbook go to Food Bank for New York City and Share Our Strength. The first chapter has five recipes to Make Your Own Bacon, which I never really thought of someone doing at home.
Other chapters have recipes for Brunch, Small Bites, Soups, Salads, and Sides, Pasta, Fish, Meat and Desserts. There are one or two color photographs in each chapter. The back contains bios on each of the contributing chefs as well as metric conversions and an index. Some of the recipes are for foods you’ve probably had before, such as New England Baked Beans with Bacon Crust and Cocktail BLTs, while others are more exotic, such as Bacon and Sauerkraut Stew with Cucumber Salad and Pig Candy Ice Cream. I marked several recipes I want to try including Bacon Mac and Cheese, Chocolate-Bacon Cupcakes and Breakfast Pie – since we had company for Thanksgiving, Carl decided to fix the Breakfast Pie one morning. It was super easy and super delicious. Carl had his doubts about adding the eggs without scrambling them, but they came out great – almost like hard boiled eggs.
9 slices bacon
1(9-inch) prepared pie crust, defrosted if necessary
6 large eggs
2cups grated cheddar cheese (8 ounces; preferably white Vermont cheddar)
1 sheet frozen puff pastry, thawed
Preheat the oven to 350ºF. In a medium skillet over medium heat, cook the bacon until crispy, about 10 minutes. Drain and cool on a rack or paper towels. Chop into small pieces. Sprinkle the bacon across the bottom of the pie crust, then break 5 of the eggs over the bacon. Top with the cheese. Moisten the edges of the pastry with water. Place the thawed puff pastry on top, cut it to fit, and press to seal the two crusts together. Cut slits in the top for steam to escape. Mix the remaining eggs in a small bowl with a little water, then brush the top of the pastry with the mixture. Bake until the pastry is golden, the cheese is melted, and the egg is cooked, about 30 minutes. Serve warm.

OMG — I may have our New Year’s Day breakfast — we usually have bacon and fried eggs, but I like this this better. I have little puff pastry cups in the freezer — I bet I could adapt this to make individual servings. Hummmm (thinking cap goes on).

Oh, I am so sorry about Kathy’s dad, I know she was just there a few weeks ago. This has been an incredibly difficult year, I’m sending prayers to the entire family. When you talk to Kathy, please tell her that I’m thinking of her.
When I seen this post title come through my reader I thought it was a confession not a book title….LOL! Now I see it is both! I really do not do a lot with bacon although some of the items mentioned here sounds yummy.

The Breakfast Pie looks and sounds delicious, even though I hardly ever eat bacon! I would never have thought to try making my own bacon, either.
