The Twelve Days of Christmas Cookies – Day 2
In case you missed it, Julie, of Booking Mama, and I are hosting a virtual cookie swap. We’ll post twelve cookie recipes (six each, since we’re alternating days) and we hope you’ll share a recipe on November 27. Julie got things started yesterday with her recipe for Nut Squares.
I decided to start off my part of the swap with my easiest tried-and-true recipe. This recipe is simple and can be thrown together at the last minute. These cookies were always popular with Vance’s friends, and everyone around here seems to love them too.
No Bake Chocolate Oatmeal Cookies
1 stick of butter
2 cups sugar
½ cup milk
2 tablespoons vanilla extract
3 heaping tablespoons cocoa
1 cup crunchy peanut butter
3 cups old fashioned oatmeal
Bring first five ingredients to a boil. Remove from heat and add peanut butter and oatmeal. Mix well and spoon onto wax paper. Remove from wax paper when set. About 20 minutes.

My mom used to make these for a special treat. I like your recipe with the chunky peanut butter though!
These are favorites in my house. I don’t make them nearly enough to satisfy the minions, but they sure are appreciative when I do.

I’ve never made cookies before! Well, honestly, I’m not much of a cook, but it’s time to change that! I’ll try out some of the recipes you suggest.

My friend gave me this recipe years ago, and I LOVE it! lol Now that I’m allergic to gluten, I must get hold of some GF oats (they’re naturally GF, but often processed alongside gluten stuff) to make them.
These look really simple and quick to make. I’m part of a cookie exchange every year and I always have a hard time deciding what to make, so this is great! I will definitely try them out.

We love these! I always have to make at batch at the holidays, so my brother can take some home on the plane.
These sound scrumptious! I make something like these but I put it in a cake pan and cut into bars….so addicting!

This is a totally new idea for me. The only no-bake cookies I’m familiar with come from the store!
I love those cookies (too much!). I have one recipe that I’ll try to remember to share if the two of you don’t. They bring back so many memories of my childhood. I won’t share any more for now, though… LOL!
Would it be very difficult to please put the measurements in a weight form either metric or imperial! I dont know how much a stick of butter weighs. Please

I’ve never heard of such cookies and they sound very exciting to me. I’ll have to try this out. Wait, I’ll ask my mom to try this out.
I tried making something ike this last year and they didn’t turn out that good.
Is that instant oatmeal? Our old-fashioned oatmeal is boiled for a while (10 or 40 minutes, depending on which kind); I’m not sure it would taste good without cooking.
Can you make substitutions for the peanut butter that would work just as well?
