Fall Festival Recipe Exchange – Country Club Squash
I’m a day late with this but, the Fall Festival Recipe Exchange is the brainchild of My Friend Amy – go to her blog to see links to everyone who’s participating. I got this recipe from my sister so long ago, the paper she wrote it on is yellowed and stained. Everyone loves this recipe – even kids. You can put this together ahead of time and bake it right before you’re ready to serve it.
Country Club Squash
2 pounds yellow squash, sliced
½ cup chopped onion
½ cup water
1 (8 ounce) carton sour cream
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon dried whole basil
1 cup soft breadcrumbs
½ cup (2 ounces) shredded medium cheddar cheese
1/3 cup butter or margarine, melted
½ teaspoon paprika
8 slices bacon, cooked and crumbled
Cook squash and onion in ½ cup boiling water until tender; drain and mash. Combine squash mixture, sour cream, salt, pepper and basil; pour into a greased 2 quart casserole dish. Combine breadcrumbs, cheese, butter and paprika; sprinkle over squash mixture. Top with bacon. Bake at 300º for 20 minutes.

Oh my — this squash recipe sounds absolutely wonderful! I will have to try it sometime soon.
My mom just gave me a whole bunch of squash, so I have to try it out. Any excuse for a little bacon.
We love squash here! I’ll have to give this recipe a try. Bacon just makes me giddy!
That sounds like an awesome fall recipe!
I’ve never tried a dish quite like this one but it sounds quite yummy.
Your summer squash recipe is quite different from mine, but it sounds yummy. If my garden hadn’t already froze I’d be trying this. We covered the garden at the first hint of frost, but then another frost came along and even though things were covered the second frost got them. Darn!
Oooh, this looks yummy! Perfect for autumn and winter!
I think this is a squash recipe that most of my family will like – although I know it would negate the effect of my Vitorin : )
I’m so glad you added a recipe. Yours are always so good!
I love squash but I can’t get anyone else in the house to eat it.
Oh gosh, this sounds heavenly.
This sounds like a dish from heaven!!
How can you go wrong with crispy bacon and cheese?!? I love the name of this recipe.
This sounds fabulous! You know it isn’t fall unless you’re eating something with squash in it!
You can’t go wrong with sour cream and bacon, in my opinion!
This recipe is great. It has more than a few of my favorite things in it. lol.
Sounds delicious. And the bacon might even get some people in my family to eat the squash.
This sounds delish. Plus it has cheese…everything tastes better with cheese. I’m passing this on to my friend also. She is obsessed with squash.
Thanks for sharing B!
Oh, perfect timing! I just bought some yellow squash. Thanks for passing this recipe on!
Three of my favorite foods: sour cream, cheese and BACON!
Oh, yum. I am definitely making this soon!
bacon? did someone say bacon? i’m a bac-a-holic. i lurve bacon…but not sure about bacon, squash, and sour cream! kathy, if you say it’s good, i’ll take your word for it. i have the palate of a 7-year-old, so i’ll stand on the sidelines with my slab o’ bacon and watch!
Yum, squash
I’m not a big fan of squash but this sounds yummy. I’m going to have to give squash another chance!
Mmmm, this sounds absolutely scrumptious! I also like the fact that it uses dried basil–who has fresh basil on hand in the fall and winter?
Squash with bacon! I must try this, my kids love just about anything with bacon.
yum!!!!
this sounds delicious, though I could skip the onions!
This sounds so good. Thanks for sharing – I love new recipes!
This recipe sounds divine!
This recipe sounds great, and more like a type of casserole than just your average squash recipe. I am going to be trying it, and thanks for posting it! I am loving all these Fall Festival posts, I have come across some really delicious looking recipes this week.
I love squash, so I’m filing this post away so I can try it some time. Thanks for sharing!
Country Club because it’s so dang fancy? This sounds absolutely to die for–thanks for sharing Kathy!!
