Chocolate Peanut Butter Cup Cookies
Vance was in the mood for some home-baked cookies, so we baked up a batch of chocolate peanut butter cup cookies. I won a prize at a cookie swap with these cookies many years ago. Here’s the recipe:
¾ cup sugar
¾ cup firmly packed brown sugar
1 cup margarine, softened
¾ cup creamy peanut butter
1 teaspoon vanilla
2 eggs
2 cups all purpose flour
1/3 cup unsweetened cocoa
1 teaspoon baking soda
1 teaspoon salt
6 ounces (1 cup) peanut butter chips
3 (1.5 ounce) packages chocolate covered peanut butter cups, cut into pieces (I usually use more)
Heat oven to 350º. In a large bowl, beat sugar, brown sugar, margarine, and peanut butter until light and fluffy. Add vanilla and eggs; blend well. Lightly spoon flour into a measuring cup, level off. Add flour, cocoa, baking soda and salt; mix well. Stir in peanut butter chips and peanut butter cup candy pieces. Drop dough by heaping teaspoonful 2 inches apart onto ungreased cookie sheets. Bake at 350º for 10 to 12 minutes or until lightly browned and set. Cool 1 minute. Remove from cookie sheets.
