Campfire Potatoes

I got this great recipe from Carl’s brother.  Well, actually after I asked several times, his brother’s wife finally wrote it down for me.  Everyone who’s had it liked it, or at least acted like they did.  It’s easy and doesn’t require a lot of attention while it cooks.

½ cup chopped onions (optional)

2 tablespoons butter or margarine

1 tablespoon flour

½ teaspoon salt

1/8 teaspoon pepper

1 cup (4 ounces) shredded cheddar cheese or smoked cheese

¾ cup milk

1 twelve ounce package frozen shredded hash brown potatoes

Sauté onions in butter.  Place in shallow 1-quart baking dish or small skillet, brushed with butter.  Add flour, salt and pepper.  Mix well.  Add cheese.  Pour milk over cheese.  Top with frozen potatoes.  Cover.  Bake at 350°F for 30 to 35 munutes, or until potatoes are completely thawed.  Mix well.  Return to oven uncovered and bake 15 to 20 minutes, or until golden brown.  4 servings.

    Looks great! I’ve found too that no matter what you make, if you glob cheese all over it, everyone likes it! Especially smoky or gouda. Thanks for the recipe!

    Looks yummy – I am always happy to find a recipe like this that isn’t based on a can of cream soup!

    Pototatoes are my favorite food so of course I want in on this!!! ;) They look yummy.
